Point 65 Kayaks
We first ran into Point 65 kayaks at a dealer expo many years ago and were immediately impressed by the idea - a portable, plastic kayak that could easily convert from single to tandem to more, but which would all fit INSIDE a car!  In effect, the portability of an inflatable with the performance of a rigid plastic model.

But how does it float?  Innovative design allows the pieces to mesh together in areas outside of where the operator sits, so there's no water to leak or accumulate where it matters.  The operator compartments on both the sit-in and sit-on-top versions are totally isolated from where the modular pieces some together.  It works quite well as shown here for one...
